Lemon and Herb Chicken

Ingredients:

4-6 pieces of chicken (thighs & breast) bone-in, skin on & excess fat removed

1 Lemon

Thyme (fresh) - a few sprigs (chopped)

Rosemary (fresh) - a few sprigs (chopped)

1 tsp Kosher salt

1/4 tsp Paprika

1/2 tsp Dill Weed

1 tsp Parsley

1 tsp Basil

1 tsp Oregano

1/2 tsp Black Pepper (freshly grinded)

1/4 tsp White Pepper

1/4 tsp Cayenne Pepper

1 tsp Dehydrated Garlic Powder

2-3 tbsp Extra Virgin Olive Oil


Method:

In a bowl, add all the dry spice and fresh herbs including the kosher salt, mixing well until all the spices and herbs are fully intertwined.

Add the spice mixture onto the chicken gently rubbing it into the skin. To enhance the flavor, make little pockets underneath the skin rubbing spices in the pockets. Cut the lemon in half and squeeze the fresh lemon onto the chicken. Cover with cling wrap and refrigerate for 45 minutes.

After 45 minutes, pat the chicken (front and back) with extra virgin olive oil.


Now it's ready to go on to the BBQ!!!


Use 1 Disposable BBQ Grill Liner from Shiny Innovations - making sure it fits snugly on your BBQ grates. Fire up your BBQ - the temperature should be 400F.

Place the chicken onto the grill liner and close the BBQ lid. Occasionally check the chicken, turning them over periodically. The chicken is fully cooked when the internal temperature greater than 165 F.


Turn off your BBQ and dispose of the BBQ grill liner.


Enjoy your BBQ-ed chicken with a lovely fresh green salad, seasonal fruits, roasted vegetables or simply on its own!
